Do you have one of those friends obsessed with pickles? This salad is for them. This dressing uses pickle juice as the acid instead of vinegar or lime, and it’s paired it with crunchy vegetables like julienned carrots, romaine, and apple slices.
Pickle Juice Dressing:
- 1/3 cup pickle juice from your favorite pickle jar
- 1/4 cup extra-virgin olive oil
- 1 tbsp Dijon mustard
- 1 tbsp honey or maple syrup
- S&P to taste
Salad:
- ½ small red onion, thinly sliced
- 1 medium apple, cored and thinly sliced
- 1 cup julienned carrots (I purchase these precut)
- 1-2 heads romaine heads, washed and chopped
- ⅓ cup sliced almonds
Assemble:
- In a large salad bowl, combine the red onion, apple, carrots and romaine.
- In a separate small bowl, whisk together the olive oil, pickle juice, mustard, sweetener and S&P. Adjust the seasoning to your taste. Drizzle over the salad ingredients, top with sliced almonds and serve.
