Watermelon & Lime Salad

This fruit salad is a perfect combination of sweet, juicy watermelon and the bright flavors of the lime dressing. It’s a fantastic option for a light and refreshing appetizer or a side dish at a summer gathering or barbecue.

Dressing:

  • 3 tbsp extra-virgin olive oil
  • 1 lime (juice and zest)
  • 1 tsp honey
  • S&P to taste

Salad:

  • 4 cups watermelon, cubed
  • 8 oz fresh mozzarella cheese, cut into small cubes
  • ½ cucumber, chopped
  • 1/4 cup fresh basil leaves, torn or chopped
  • 1/4 cup olives, pitted and sliced
  • ¼ cup sliced and roasted almonds pre-made available in the produce section
  • S&P to taste

Prep:

  1. In a small bowl, whisk together the extra-virgin olive oil, fresh lime juice, honey, lime zest, salt, and black pepper. 
  2. Taste the dressing and adjust the sweetness and seasoning to your preference. 

Assemble:

  1. Add watermelon, mozzarella, cucumber, olives, and basil into a serving bowl. Gently toss the ingredients to combine. Top with basil and sliced almonds.
  2. Pour the prepared lime dressing generously over the salad and gently toss the salad to coat all the ingredients with the dressing.
  3. Let flavors meld for 10-15 minutes and stir once more before serving.
